Diets 2 Granny Smith apples, diced
1 heaping tablespoon silan, such as Heaven & Earth Date Syrup
1 teaspoon lemon juice
1 teaspoon cinnamon
1 and 1/3 cups oil, such as Gefen Canola Oil
3 eggs
1 and 3/4 cups sugar
1 teaspoon vanilla bean paste
3 cups Glicks Flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1 tablespoon silan, such as Heaven & Earth Date Syrup
2 teaspoons boiling water
pinch of salt
ice cream
Turbinado sugar
8 small ramekins
Preheat oven to 350 degrees Fahrenheit. Spray ramekins well with cooking oil and set aside.
In a small bowl, mix the apples, silan, lemon juice, and cinnamon. Divide evenly between the ramekins.
In a bowl, combine the oil, eggs, sugar, and vanilla paste. Add the flour, baking soda, salt, cinnamon, and allspice. Divide the batter between the ramekins, covering the apple mixture.
Bake 30-35 minutes.
In a bowl, whisk together confectioners’ sugar, silan, boiling water, and salt until smooth.
Drizzle the cake with the glaze and serve warm with a scoop of ice cream and/or sprinkle with turbinado sugar.
