Yields 6 ice cream sandwiches
12 frozen Kineret Cookie Dough balls
1 to 1 and 1/2 cups ice cream
sprinkles, to coat the sides of the sandwiches
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper and set aside.
Cut each cookie dough ball in half and reroll (to ensure evenly shaped, round cookies). Place on the prepared baking sheet. Bake about eight minutes, slightly less than full-sized cookies. Let cool completely.
Add sprinkles to a shallow bowl.
Using a cookie scoop, scoop ice cream onto six of the cooled cookies. Top each with another cookie and roll in sprinkles to coat the sides. Freeze until ready to enjoy.
