Mini Gluten-Free Vegetable Kugels

Ingredients

Main ingredients

  • 2 cloves garlic, crushed, or 2 cubes Gefen Frozen Garlic

  • 2 onions, diced

  • 4 mushrooms, diced

  • 1 (16-ounce) bag frozen cauliflower florets, defrosted

  • 1 whole egg plus 1 egg white or 3 tablespoons Haddar Egg Whites

  • 2 teaspoons avocado mayonnaise or light mayonnaise (sugar-free, if desired)

  • Tuscanini Sea Salt, to taste

  • black pepper, to taste

Directions

Prepare the Kugels

1.

Chop any large cauliflower florets smaller. Sauté garlic, onions, and cauliflower. 

2.

Preheat oven to 350 degrees Fahrenheit.

3.

Mix together with eggs, avocado mayo, and seasonings.

4.

Spray a muffin pan with olive oil cooking spray and scoop batter inside. Bake for 40 minutes.

Prepare the Kugels

Yields 8 to 10 large mini kugels

mushrooms where do the mushrooms come in?

Sautee them with the garlic, onions, and cauliflower. We will add that to the recipe, thanks!
