The sweet meatball and savory pancake are like a party on the palate.
2 tablespoons oil, divided
1 small onion, finely diced
2 cloves garlic, crushed or 2 cubes Gefen Frozen Garlic
1 tablespoon parsley
1 egg, lightly beaten
1/4 cup breadcrumbs
1 tablespoon Glicks Ketchup
1/2 tablespoon brown sugar
2 tablespoons lemon juice
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1 pound ground beef
1 cup Gefen Maple Syrup
1/2 cup Glicks Ketchup
4 tablespoons lemon juice
2 tablespoons mustard
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
2 cups water
3 tablespoons oil
3 tablespoons sugar
1 teaspoon salt
2 teaspoons baking powder
2 cups Glicks Flour
Heat a large skillet with one tablespoon oil.
Sauté onion over medium heat until soft and translucent.
Add garlic and sauté until fragrant, about 30 seconds.
Remove from pan.
In a large bowl, combine parsley, egg, bread crumbs, sautéed onion mixture, ketchup, brown sugar, lemon juice, salt, and pepper.
Add meat and mix well.
Form meat mixture into 1/4-inch-sized balls.
Heat frying pan over medium-low heat with one tablespoon oil.
If desired, sear meatballs, in batches, on all sides until they’re no longer pink, approximately one minute per side, and remove from pan.
Place sauce ingredients in pan (or a bigger pot if frying pan is too small) and stir until combined.
Bring to a simmer.
Add meatballs to pan and cook for five minutes.
To prepare pancakes or waffles, combine all ingredients in a bowl. Mix until fully incorporated with no lumps.
Heat a frying pan or waffle maker.
For pancakes, lightly grease pan. Pour 1/8 cup batter into pan. Cook until edges are set and beginning to brown, about two minutes. Flip and cook for another minute until golden. Stack three to four in a stack and top with mini meatballs.
For waffles, heat waffle maker. Pour one cup batter into waffle maker. Bake until ready. Cut cooled waffles into smaller squares and top with meatballs.
