Diets These muffins are full of good-for-you fiber and are downright delicious and filling. I used, of course, Black Bag Barry Callebaut mini chocolate chips for a rich and deep chocolate flavor. There is also a low-fat option on the box, using applesauce to replace most of the oil, and personally, I like it even better! Make them any size you like. Yesterday I made them in mini muffin tins for a cute alternative to the larger ones.
1 box Best Ingredients, Best Results Oat Bran Chocolate Chip Muffin Mix
2 extra-large eggs
2/3 cup oil or 3 tablespoons oil plus 1/2 cup Haddar Apple Sauce
1/2 cup milk, water, or juice
1/2 cup dried cherries
1/2 cup shredded coconut (optional)
1/2 cup chopped pecans
Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
Prepare Oat Bran Chocolate Chip Mix according to package directions. Add dried cherries and coconut.
Spoon into muffin tins and sprinkle with the chopped pecans.
Bake for 15 minutes for mini muffins and 20 for regular size.
