3 ounces fresh yeast
1 and 1/3 cups warm water
1/4 cup plus 3/4 cup sugar, divided
5 pounds flour
4 eggs plus 1 additional egg for glazing
3/4 cup oil
3 cups Kedem White Grape Juice or other light grape juice or apple juice
2 tablespoons salt
Crumble yeast into a bowl with warm water. Add one-fourth cup sugar. Set aside until it bubbles.
Combine remaining ingredients in mixer (except the egg for glazing), adding yeast mixture last. Mix for 10 minutes.
Separate challah and form small rolls. (Read more about hafrashat challah here.)
Place on baking sheet. Brush with egg. Bake for 20 minutes.
Preheat oven to 375 degrees Fahrenheit.
