These tarts are my go-to when prepping lunch in advance. They’re the cutest hors d’oeuvres and are so good. They’re kid and adult friendly, making everyone happy.
Yield: 24 mini tarts
12 squares Gefen Puff Pastry dough
1 bag Beleaves Frozen Spinach, defrosted and drained
1/2 cup whipped cottage cheese
1/2 cup ricotta cheese
1/2 cup shredded muenster or mozzarella cheese
1 egg
Gefen Salt, to taste
pepper, to taste
Preheat oven to 400 degrees Fahrenheit. Grease mini muffin tins with cooking spray.
Cut each square dough in half and press into each muffin hole.
While oven is preheating, prepare spinach filling.
In a bowl, combine spinach, cheeses, and egg, and season well with salt and pepper.
Fill puff pastry squares with spinach-cheese mixture and bake for 15–20 minutes until edges are golden brown.
