Diets These healthy muffins are easy to prepare and are loaded with veggies. Bite-sized and super cute, they are a fun way to incorporate vegetables into kids’ meals but are adored by both kids and grownups!
Yields 24 mini muffins
2 medium carrots, grated (2 cups)
1 zucchini, grated (1 cup)
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon Gefen Garlic Powder
1 cup flour
2 teaspoons Haddar Baking Powder
2 large eggs
1/4 cup oil
Preheat oven to 350 degrees Fahrenheit. Lightly grease or spray a mini muffin tray.
Combine all ingredients in a bowl until just incorporated.
Spoon into muffin compartments.
Bake until set, about 30 minutes.
