Diets Do you love mandel brodt but don’t love how they are usually twice-baked and crunchy? Then these are for you! These mini mandelbrodt-style cookies are soft to bite into, with a sweet flavor and a chocolate surprise in the center. Simply delicious!
1/4 pound margarine
2/3 cup sugar
1 egg
2 cups flour
1 and 1/2 teaspoons baking powder
pinch of salt
2 tablespoons Gefen Vanilla Sugar
Cream margarine and sugar, add egg.
Add all ingredients and knead to a soft dough.
Divide dough in half and form two long even logs. Place into a lined cookie sheet.
Press slight indentation along log and fill with chocolate chips or apricot jam.
Bake at 350 degrees Fahrenheit for 25 minutes. Slice while hot.
Yield: 24 slices

I substituted coconut oil for the margarine and it came out chewy moist and delicious.
