Diets I recently read that mint chocolate chip is America’s number-one selling flavor of ice cream after vanilla. Really?? I hadn’t had that flavor in years. Out came the mixer, and once it was made, the taste took me back to my youth, and I fully understood why it’s an all-time favorite. I use Callebaut chocolate chips, as they have an authentic bittersweet chocolate flavor, and when it’s the star of the ice cream, that makes a huge difference.
2 (8-ounce) containers non-dairy whipped topping
3 egg yolks
3/4 cup Gefen Confectioners’ Sugar
1/2 cup soy milk
1/2 teaspoon mint extract
a few drops green food coloring
1 (9-ounce) bag Callebaut chocolate chips
In the bowl of an electric mixer, whip the topping until stiff. Add the remaining ingredients one at a time and mix until just combined.
Add the chocolate chips and fold together. Freeze overnight.
