Start Cooking

Prepare the Muffins

Yields 12 muffins.

  1. Add all ingredients to the bowl of a stand mixer. Mix on low-medium speed to combine.

  2. Pour into muffin papers. Place three to four berries into each cup.

  3. Bake for 15 minutes at 350 degrees Fahrenheit (180 degrees Celsius).

    Could you please confirm how many eggs ? In the video, I can see two but in the recipe only one. Please advise.

    Can you use frozen blueberries/strawberries? Can you double the recipie? ( asking because the amounts are so exact.)

    If you are using frozen fruit, I would defrost it first and make sure it's not too soggy. NO reason to not double the recipe.

    Looks great! I've never used sunflower oil before. Is the flavor of the oil a key ingredient in this recipe or can I sub with another oil?
