Diets In a rush but need another side dish? This kugel is the perfect answer! Simply pull out a bag of frozen veggies, and super quickly, you’ll have a healthy kugel to serve. This has great flavor and holds very nicely when cut.
1 package California mix vegetables, coarsely chopped
3 tablespoons Gefen Mayonnaise
1 and 1/2 tablespoons Gefen Bread Crumbs
1 and 1/2 tablespoons Glicks Flour
2 tablespoons oil
2 tablespoons onion soup mix or 1 small onion, minced
3 eggs
Combine all ingredients, mixing well.
Pour into nine-inch pan. Bake at 350 degrees Fahrenheit for 50 minutes to one hour.

hi also what brand california mix do you use. I have never seen a kosher brand
Usually it’s called California Blend. The following are Kosher brands commonly sold in the NY area at least: Pardes Farms, B’Gan; I think even Bodek
also do you thaw vegetables first or use frozen and what size bag 16, 24 or 32
Any brand works, if you live near a kosher grocery store, there are multiple brands that sell this mix.
