I had some leftover mjadra and I knew the family had enough after dinner and lunch. I needed to repurpose this so as not to throw it out. I decided to make it into patties. My family loved it! We made sandwiches with lettuce and tomatoes and ate it like that. Dip them into your favorite sauce or serve next to a salad. Healthy and yummy!
Leftover mjadra, about 1 cup [Ed. Try this easy mjadra recipe!]
1 egg
1 to 2 tbsp of flour (add more if needed)
Add another egg if you have more than a cup of mjadra
You can add other veggies for color, variety, and flavor like carrots, zucchini, or celery, minced up
1 tsp salt
1 tsp ground pepper
1/2 tsp cumin
1/4 cup oil, for frying
Put all ingredients in a bowl and mix. Form into balls, then press down into patties.
Heat up a pan with about 1/4 of oil just to cover pan. Put patties in it and cook till golden brown. Flip over and do the same to the other side.
