Mocha Bundt Cake

Bundt cakes have a special, homemade, “welcome!” attitude about them. They look like you put a little something extra into the cake, but of course, it’s the pan that does the trick.

Ingredients

Cake

  • 4 eggs

  • 2 cups sugar

  • 1/4 cup coffee, diluted in 3/4 cup hot water

  • 2 packets Gefen Vanilla Sugar

  • 1 cup oil

Glaze

  • 3 teaspoons coffee

  • 2 tablespoons boiling water

  • 2 tablespoons oil

  • 1 – 1 and 1/2 cups confectioners’ sugar

Directions

Cake

1.

Beat eggs and sugar until fluffy. Add all remaining ingredients, and the diluted coffee, to the egg-sugar mixture. Mix well.

2.

Pour into greased Bundt pan and bake at 350 degrees Fahrenheit for 50 minutes.

Glaze

1.

Dissolve coffee in the boiling water and mix with oil and confectioners’ sugar until smooth, adding more sugar until desired consistency is reached.

2.

Pour glaze over cake.

Bigger pan I wanna do this bundt cake in a 10-15 cups pan. Should I double all ingredients?

I know that a packet is about 1 and 1/2 teaspoon vanilla extract.

I was so curious. So I made the cake. I used two teaspoons vanilla extract and it was great.

works fine in a 9 by 13 delicious and great texture. I baked it in a 9 by 13 till toothpick came out clean.

Mocha Bundt Cake We loved this cake! By mistake, I used a full cup of boiling water rather than 3/4 cup and was worried that it wouldn’t turn out right as a result, but I baked it for a few extra minutes and it was perfect.

Oldie and Goodie! I’ve been making this for years and it’s one of the oft-requested Shabbos cakes in our house. My kids don’t go for a very strong coffee taste and I don’t like overly sweet, so I’ve reduced the sugar to 1 1/2 cups and the coffee to 2 tablespoons.

Best Bundt cake! I make this very often for simchos and its always finished down to the last crumb.
