The secret to this unbelievably savory vegetarian chopped liver is none other than your frying pan! The eggplant and onions have amazing flavor.
2 eggs, beaten
Yehuda Matzo Meal or potato starch as needed
oil for frying
9 hard-boiled eggs
5 onions sautéed in oil
3 eggplants, sliced
1 teaspoon salt
Dip eggplant slices into beaten eggs and then in the matzo meal or potato starch.
Fry in hot oil until golden on each side.
Blend together the fried eggplant slices with the remaining ingredients. Mix well.
