Mock-o-roni (Cauliflower Mac ‘n Cheese)

  • 1 teaspoon salt

  • 1 and 1/2 cups cheddar cheese

Directions

Prepare the Cauliflower Mac 'n Cheese

1.

Preheat oven to 375 degrees Fahrenheit.

Soak, wash, and check the cauliflower (if needed). Chop it into half-inch chunks that resemble macaroni. Place cauliflower in a ziplock bag. Add olive oil, garlic powder, and salt and shake well to coat the cauliflower pieces. Place cauliflower on a cookie sheet lined with parchment paper.

Bake for 45 minutes.

Uncover and add the cheddar cheese on top. Bake uncovered for an additional 10-12 minutes or until cheese is melted, bubbly, and golden.

5.

Pair this “mock”-o-roni with a starch like a root veggie soup, wholesome bread, or even another pasta dish for a balanced meal.

Notes:

Aim for fresh cauliflower for the best outcome.

No where in the print version for this recipe did it say to COVER the pan of cauliflower! I am making it now, and missed this step. I hope it still comes out!

“Mock” a Roni & Cheese If using frozen cauliflower (yes, I saw the note that said fresh is best), how many packages should I use?

Hi! I would recommend 2 bags for 2 sheet pans- I would also try to cut up the frozen cauliflower florets into smaller pieces.

If i am using frozen cauliflower, do i bake it for the same amount of time as fresh?

I’d say you might need a bit more time to get the cauliflower to crisp but not that much more. Keep an eye on it.

What is the green spice on it it’s not in recipee. Can u make an warm up again or best fresh

There are some green scallions sprinkled on top for some added decoration. It is best fresh but you could reheat.

easy and yummy! great hit with the kids and husband, super yummy, healthy and easy, i used frozen (since we cant get in israel checked and fresh) and it came out great, i just used a paper towel to dry the defrosted cauliflower! thanks rorie for another great recipe!
