Modern Apple Pie (Passover)

Ingredients

Crumble

  • 2 cups Manischewitz Potato Starch or other potato flour

  • 1 and 1/2 cups ground walnuts or almonds

  • 2 eggs

  • 1/2 cup nut oil

  • 3/4 cup sugar

  • pinch of salt

  • 1/2 teaspoon Gefen Cinnamon

  • 1/2 cup blanched almonds, coarsely chopped

Filling

  • 6 Pink Lady or Granny Smith apples

  • 1/2 cup sugar

  • 1/2 teaspoon Gefen Cinnamon

Directions

Prepare the Apple Pie

Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).

Prepare the crumbs. Combine all ingredients to form crumbs (in a mixer or by hand).

Prepare the filling. Peel apples and dice into small pieces. Add the other ingredients and mix well.

Assemble the pie. Press half the crumbs into a medium baking pan (eight by 12 inches) and bake for 10 minutes. Spread the apple filling over the baked crumbs and sprinkle the remaining crumbs on top. Bake for 40 minutes, uncovered. Let cool slightly and cut into squares.

Notes:

This pie can be frozen.
