Diets 1 cup sugar
3 eggs, beaten
3/4 cup oil
juice and grated zest of 1 lemon
1 and 1/2 cups Manischewitz Potato Starch or other potato flour
5 large Granny Smith apples, peeled
1/2 cup walnuts, coarsely chopped
pinch of Gefen Cinnamon
Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
In a bowl, combine sugar, eggs, oil, lemon juice and zest, and potato flour and mix well until smooth.
Thinly slice the peeled apples (or grate using a coarse grater) and add to the batter. Add nuts and cinnamon and mix well. Season to taste if necessary.
Line an eight- by eight-inch baking pan or two loaf pans with Gefen Parchment Paper and pour in the batter.
Bake for 45 minutes, until golden brown.
Yield: 1 8×8-inch cake or 2 loaf pans

Flavorful Cake and Easy to Make Hi Efrat,, Thanks so much for sharing. I just made it today because the stores around us were out of all Passover cakes, cake mixes and cookies and my sweet tooth could not be denied. Your cake is quite good. A few tips: it took closer to one hour to cook. I wrapped aluminum foil around the edges of my 8 x 8 pan so it wouldn’t burn on the edges. Also I didn’t have Granny Smith so used gala or whatever we had. Use a big lemon as I did and it really tastes tangy.
