Add sunshine to your morning with this “good for you” (and kosher!) fruit and nut granola. The crunchy oats and nuts, coupled with the slightly tart dried fruit, create a quick breakfast or healthy “on the go” snack.
1/3 cup vegetable oil or light-flavor olive oil
1/4 cup honey
3 tablespoons golden brown sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/8 teaspoon salt
3 cups uncooked old-fashioned rolled oats
3/4 cup sweetened flaked coconut
2/3 cup coarsely chopped walnuts
1/2 cup raw cashews
3 tablespoons raw shelled sunflower seeds
1/2 cup dried sweetened tart cherries
1/3 cup golden raisins
1/4 cup chopped dried apricots
Preheat oven to 325°F.
Place oil, honey, brown sugar, vanilla, cinnamon, and salt in a large bowl; whisk well. Add oats; mix well. Stir in coconut, walnuts, cashews and sunflower seeds. Evenly spread mixture on a large baking sheet (11 x 17 x 1-inch); pack down firmly. Bake 25 to 30 minutes or until golden brown. (Watch carefully so granola does not over brown.)
Place pan on wire rack; working quickly, stir in cherries, raisins and apricots. Spread mixture evenly on pan and pat down firmly. Cool completely. (Granola will firm and harden as it cools.) Store in airtight container.
Makes about 5 cups.
