I like making these as opposed to a full quiche since they’re much neater but still pack a punch.
1–2 tablespoons oil
6 white mushrooms, diced
1 small onion, diced
2 eggs, divided
1 and 1/2 teaspoons Glicks Flour
1 tablespoon cottage cheese
1 and 1/2 tablespoons shredded cheese
1/2 teaspoon garlic powder
pinch of salt
pinch of black pepper
Pereg Everything seasoning or sesame seeds
In a frying pan, heat oil and sauté mushrooms and onion.
In a bowl, mix one egg, flour, cheeses, and spices.
Place 1/2 teaspoon of the mixture in the middle of each pastry square. Top with 1/2 teaspoon of the mushroom mixture.
Fold over the dough to form triangles and press the edges tightly.
Whisk the other egg and brush it on top of each triangle. Top with everything spice or sesame seeds.
Bake at 375 degrees Fahrenheit for 20 minutes.
