Great for Yom Tov! You can also use mini tart pans and serve individual quiches to each person at your table. This is especially nice for a simcha!
2 and 1/2 cups Mishpacha Flour
1/2 teaspoon salt
2 sticks margarine
1/2 cup seltzer
1 egg yolk
5 zucchinis, peeled and cubed
3 onions, diced
1 (16-ounce) can mushrooms, drained
2 tablespoons oil
3 tablespoons Yehuda Matzo Meal
3 eggs
2 tablespoons Gefen Mayonnaise
3–4 tablespoons onion soup mix
Mix all ingredients well and divide dough in two.
Flatten each part into a nine-inch round pan and bake at 350 degrees Fahrenheit for 10 minutes.
Preheat oven to 350 degrees Fahrenheit.
Cook zucchini in water to cover for 15 to 20 minutes in a medium-size pot. Drain.
Sauté onions and mushrooms in oil until onions are golden and soft. Combine all ingredients, including the zucchini and sautéed vegetables, and mix well.
Place the mixture into the two pie crusts and bake, uncovered, for one hour.

matza meal What can I substitute for Matza meal?
Flour should work fine too!
Do I need to use seltzer, or is water okay? What does the seltzer do? Or is water alright?
It is best to use seltzer, it helps create bubbles and airiness to the dough.
