Most non-dairy mushroom quiches swap out the cheese with nutritional yeast for that creamy dairy texture. Since kosher nutritional yeast is not readily available in places outside of the US, I was determined to figure out a mushroom quiche recipe without it that doesn’t skimp on creaminess and taste. I think this one nails it!

Directions

  1. Preheat oven to 450 degrees Fahrenheit. Bake the crust for 10-12 minutes until lightly golden. Reduce oven heat to 350 degrees Fahrenheit.

  2. Heat one tablespoon oil in a frying pan. Fry the pastrami slices for two to three minutes on each side. Allow to fully cool and cut into small pieces.

  3. Wipe the pan clean. Heat additional one tablespoon oil and add in the leeks and mushrooms. Cook for five to eight minutes until cooked through and softened.

  4. In a bowl, beat the eggs and almond milk. Add pastrami, mushrooms, leeks, salt, and pepper.

  5. Pour mixture into pie crust and bake for 40-50 minutes until the center is fully set and does not jiggle.
