Diets This savory dairy quiche is just the ticket for a weeknight dinner or an option at your next dairy buffet event.
1 recipe quiche dough
3 eggs
1 cup sour cream
1/8 teaspoon pepper
1 small onion, minced
4 tablespoons butter
1 pound fresh mushrooms, sliced
1 teaspoon Gefen Salt
1 teaspoon Tuscanini Lemon Juice
1/4 cup grated cheese
Prebake quiche dough.
Combine eggs, cream and pepper and set aside. Sauté onions in one tablespoon of butter. Stir in mushrooms, salt and lemon juice. Cover pan and cook over low heat for eight minutes.
Uncover pan and cook over medium heat until liquid evaporates. Gradually stir in eggs. Pour into shell. Sprinkle cheese. Dot with remaining butter.
Bake at 375 degrees Fahrenheit for 30 minutes.

Does this freeze Well? Or should I prepare it and then freeze and bake right before serving?
Quiche can be frozen prior to baking or after baking; baking first may make the quiche a little easier to maneuver in the freezer.
