A simple preparation of a staple side dish. Rice with sauteed onions and mushrooms is the perfect accompaniment to any meal.
2 medium onions, diced
4 tablespoons oil
1 pound mushrooms, diced
1 cup rice
2 cups boiling water
1 tablespoon onion soup mix
Sauté onions in oil until golden.
Add mushrooms and sauté for 10 minutes.
Add rice, mix well.
Add water and soup mix, cook for 15-20 minutes or until water is absorbed.

Really good – I added a tsp salt though
Mushrooms and Rice can this be made with canned mushrooms? if so, how much?
I don’t see why not, I personally like fresh mushrooms better however if you like canned you can use an 8 oz can of mushrooms.
