What kind of cheese is not your own? Nacho cheese! Jokes aside, I’ve been craving some nachos with a delicious cheese sauce for a while now. Growing up non religious, movie theater nachos were my guilty pleasure and that flavor has stuck with me, but after tasting some really bad variations I knew I had no choice but to make my own.
2 Tbs butter
4 Tbs flour
2 C milk
10-12 oz shredded cheddar
2 Tbs hot sauce
2 Tbs juice from pickled jalapeno plus jalapeno pieces for garnish
1 tsp salt
2 tsp chili powder
1 bag tortilla chips
Combine flour and butter to form a roux.
Deglaze with milk. Whisk milk so that all roux clumps dissolve and milk is thick and bubbly.
Add in shredded cheese and allow to melt. Keep mixing so it doesn’t burn.
Add hot sauce, pickle juice, salt and chili powder.
Cook down an additional 10 minutes.
Pour mixture through a fine mesh strainer to achieve maximum smoothness (optional).
Pour over tortilla chips.
Garnish with pickled jalapeno.
Eat immediately.
