Usually, each Motzaei Shabbat or Sunday I ask each of my four oldest children to choose a dish or meal they’d like to see on the dinner menu that week. It makes the planning easier for me, and every kid is happy at least once! One of my sons, tired of the usual options, asked me if we could find new idea. So we checked out some restaurant menus. This was the dish that he chose for me to recreate for dinner that week.
1 bag steak-cut fries
2 tablespoons butter
2 tablespoons Mishpacha Flour
1 and 1/2 cups whole milk
4 ounces cheddar cheese
2 ripe but firm avocados, diced
juice of 1 lime (or about 2 tablespoons Heaven & Earth Lime Juice)
1/2 teaspoon salt
1/2 small red onion, chopped
store-bought salsa
fresh cilantro
Bake fries according to package instructions.
Meanwhile, prepare sauce. Melt butter in a saucepan. Whisk in flour until combined, then whisk in milk and cook over medium heat until mixture thickens and coats the back of a spoon. Stir in cheese until melted. You should have a nice, thick cheese sauce.
Prepare the guacamole: Combine all ingredients. Work gently with the avocado so the chunks remain whole (if it’s mashed, it’ll be hard to scatter the avocado over the fries).
Pile fries on a plate. Drizzle with sauce. Top with avocados, salsa, and fresh cilantro.
