Full with healthy stuff but the kids have no idea and gobble it up every week.
1 and 1/2 lb ground meat (2 parts ground chicken to 1 part meat)
2 eggs
1 small onion, grated
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup ground flax seeds
1/3 cup parsley flakes
1/4 cup minced celery leaves
1 small onion, diced
Salt, to taste
Paprika to taste
1 can of mushroom, drained
2 tablespoons mushroom soup mix
2 tablespoons whole spelt flour
6 cups hot water
coconut oil, for sautéing
In medium bowl, mix ground meat, eggs, onion, salt, pepper, flax seeds, parsley flakes, and celery leaves with your hands. (I wear vinyl gloves for this step.) And set aside.
Prepare sauce in a large pot: sauté onion in oil (the healthy way to sauté is to first make the pot very hot with nothing in it, then add the diced onions and the add the coconut oil, stirring constantly until onions are translucent).
Add salt, paprika, and mushrooms. Continue stirring with a wooden spoon.
Add the soup mix and the flour, stir into the vegetables until coated.
Pour in the hot water, cover and bring to a boil.
Shape ground meat mixture into balls and drop into the boiling sauce. (For uniform size balls use an ice cream scoop, occasionally dipped into water.)
Lower the flame and simmer for 40 minutes. Do not overcook so they don’t get dry.
Enjoy these balls the way they are or over a bed of mashed potatoes.
