Super easy, no-bake brownies are a favorite Passover treat that comes together in minutes. These (gluten-free and vegan!) bad boys don’t have any of that heavy starchiness weighing them down and are loaded with delicious fudgy goodness that will have you coming back for more! 1 and 1/3 cups Pereg Almond Flour
1/2 cup cacao (or Gefen Cocoa) powder
2/3 cup natural runny almond butter, room temp
1/2 cup Gefen Pure Maple Syrup
2 tablespoons Heaven & Earth Coconut Oil, melted
1 teaspoon vanilla extract
pinch of sea salt
handful of mini chocolate chips (optional, but recommended)
1 cup dark (or semisweet) chocolate chips
2 tablespoons Gefen Unsweetened Almond Milk
In a small bowl, combine almond flour, cacao, almond butter, maple syrup, melted coconut oil, vanilla, and salt. Mix well with a fork, breaking up all the clumps until smooth. Add chocolate chips.
Press the batter into the bottom of an eight-inch square pan lined with parchment, spreading evenly.
To make the ganache, combine chocolate chips and almond milk in a microwave-safe bowl and microwave for 60 to 90 seconds, stirring every 30 seconds, just until smooth. Don’t overcook them or they’ll taste burnt.
Spread the ganache over the brownies and refrigerate to set, about 30 minutes.
