Yields: 2 loaves biscotti
Directions
1. Preheat oven to 350 degrees Fahrenheit.
2. In a medium-sized mixing bowl, mix sugars and oil. Stir in the eggs.
3. In a small bowl, combine flour, vanilla sugar, baking soda, and salt. Add dry mixture to the wet mixture and mix well.
4. Remove one cup of dough and place in a separate bowl. Add pudding mix and mix until incorporated.
5. Stir chocolate chips into the lighter dough.
6. Remove half of the lighter dough and form two 2×12-inch loaves on a lined baking sheet, spread apart. Split the darker dough in half and spread over the two loaves. Cover the darker layer with remaining lighter dough.
7. Bake for 20–25 minutes.
Notes:
The loaves spread to approximately double the width, so make sure you have space for both loaves on your baking sheet.
