Diets Crispy on top, and soft and chewy inside, these cookie bars instantly became a family favorite. Nobody would guess how easy they are to prepare!
Yield: 2 dozen
1 cup oil, such as Gefen Canola Oil
3/4 cup granulated sugar
3/4 cup Haddar Brown Sugar
2 eggs
2 and 2/3 cups Glicks Flour
1 (3.25-ounce) package instant vanilla pudding mix
1 teaspoon baking soda
1 teaspoon vanilla sugar
1 cup chocolate chips
6 chocolate sandwich cookies, roughly chopped
6 vanilla sandwich cookies, roughly chopped
Preheat oven to 350 degrees Fahrenheit. Line two 9×13-inch baking pans with Gefen Parchment Paper and set aside.
In a bowl, mix the oil, granulated sugar, brown sugar, and eggs until combined.
Add the flour, pudding mix, baking soda, and vanilla sugar. Mix until a smooth batter forms.
Stir in the chocolate chips and about two-thirds of the cookie pieces, reserving the remaining third for step 5.
Divide the batter evenly between the prepared pans, pressing into an even layer in each pan. Press the reserved cookie pieces on top.
Bake for 22–25 minutes, until light golden. Set aside to cool and cut each pan into 12 bars.
