No-Mixer Chocolate Chunk Cookies

Last minute. No time. These cookies take minutes to put together and — the best part — there’s only one bowl to wash (I’ve even mixed these in large resealable plastic bags for even less cleanup, but it’s still easier in a bowl). In my house, parve chocolate chunk cookies disappear quickly. Dairy chocolate chunk cookies disappear even more quickly.   Inspired by Cook Kosher member chef102

Ingredients

  • 1 cup brown sugar

  • 1/2 cup sugar

  • 1/2 cup oil

  • 1/2 cup (1 stick) butter, melted

  • 2 eggs

  • 1 teaspoon Gefen Vanilla Extract

Directions

Prepare the Cookies

Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.

In a large bowl, combine sugars, oil, and melted butter. Use a fork to stir together. Add eggs and vanilla; mix to combine. Add flour, baking soda, and salt. Mix well. Stir in chopped chocolate.

Form dough into small balls (this is easier to do using a cookie scoop) and place on prepared baking sheet, about two inches apart. Bake for eight to 10 minutes. Let cool for five minutes before removing from baking sheet.

Notes:

We love to use a praline milk chocolate bar in this recipe.

Variation:

For a parve cookie, omit the butter and use one cup total oil. You’ll also need bittersweet or semisweet chocolate.

i made the parev version. I used 3/4 brown sugar and about 1/3 white sugar. still super sweet-would use even less next time but very tasty!

So Soft!! I made a parve version with a little less than 1/2 cup oil instead and it came out really good!
