Diets As you might have guessed from the name, this is not your typical box mix! The flavor of the rich espresso and crunchy chocolate chips elevates this humble box mix to the next level, creating the ultimate chocolate espresso bite of everyone’s dreams. Just wait until you try that glaze! Your mind will be blown.
1/3 cup hot water
1/3 cup oil
2 eggs
2 tablespoons espresso powder
1 (19.8-ounce) box chocolate cake mix (see alternative cake recipe below)
3/4 cup Glicks Chocolate Chips
2 tablespoons hot water
2 teaspoons espresso powder
1 tablespoon margarine, melted
1 teaspoon vanilla extract
1 and 1/2 cups Gefen Confectioners’ Sugar
1 and 3/4 cups Glicks Flour
1 and 1/2 cups sugar
3/4 cup Gefen Cocoa
1 and 1/2 teaspoons baking soda
1 and 1/2 teaspoons baking powder
2 teaspoons Gefen Vanilla Sugar
1 teaspoon salt
2 eggs
1 cup orange juice
1/2 cup oil
1 cup boiling water
2 tablespoons instant espresso powder
3/4 cup Glicks Chocolate Chips
Preheat oven to 350 degrees Fahrenheit.
Combine 1/3 cup hot water, oil, eggs and two tablespoons espresso powder in a mixing bowl.
Add cake mix and mix until smooth. Fold in chocolate chips and transfer to a sheet pan. (Note: Batter will not fill up the whole tray.) Bake for 35 minutes.
While cake is baking, dissolve remaining two teaspoons of espresso powder with remaining two tablespoons hot water, margarine, and vanilla. Gradually add confectioners’ sugar, mixing continuously until no lumps remain. Pour glaze over cooled cake and slice into small squares.
