This recipe is a great way to turn leftover chicken into a fresh new meal. It has a very different look than the baked chicken that was served on Shabbos and is fun to eat. Don’t be surprised if you start getting requests for this one on a random Tuesday.
3 leftover chicken bottoms or cutlets, shredded or cut into thin strips
1/3 cup Glicks Ketchup
2 and 1/2 tablespoons Gefen Honey
1/2 teaspoon Tuscanini Apple Cider Vinegar
garlic powder
onion powder
paprika
1 bag yellow tortilla chips
romaine lettuce, chopped
2 plum tomatoes, diced
1 avocado, cubed
1 small red onion, sliced into thin half-moons
garlic mayo, for drizzling (optional)
In a small saucepan, heat ketchup, honey, and apple cider vinegar. Add spices to taste. Mix chicken into sauce and heat through.
To assemble, place tortilla chips on a big platter. Add a layer of lettuce. Add shredded/sliced chicken. Top with tomatoes, avocado and red onion.
Drizzle with garlic mayo, if desired.
