This is a great “welcome home from school” snack for kids! No mixer necessary!
2 cups oat bran (use gluten-free if needed)
1/4 cup brown sugar
2 teaspoons Haddar Baking Powder
1/2 teaspoon salt
1 cup skim or low-fat milk or substitute
2 egg whites (1/3 cup Haddar Egg Whites) or 1 whole egg
1/4 cup Gefen Honey
2 tablespoons olive or canola oil
1/2 cup frozen blueberries or 1/3 cup Gefen Chocolate Chips (optional)
Preheat oven to 425 degrees Fahrenheit.
Combine dry ingredients in mixing bowl. Add remaining ingredients and mix well, by hand, until just combined.
Pour batter into muffin cups.
Bake at 425 degrees Fahrenheit for 12–15 minutes.

They are DELICIOUS and don’t even taste healthy! I used regular oats and halved everything besides the blueberries and they are yum! Just not sure why they still taste raw after baking for half hour ;(.
