Diets If you need your ice cream to be parve, this creamy homemade, no-churn recipe dotted with chewy bits of sandwich cookies really hits the sweet spot.
3 cups Gefen Oat Milk, plus additional as needed
1 cup cashews
15 sandwich cookies
Open the cookies, remove the cream from the center, and break up the cookies. Set aside.
Add the cream to a high-speed blender along with the oat milk and cashews. Blend until smooth. Pour the mixture into ice cube molds and freeze overnight.
Add the frozen ice cubes to a high-speed blender. Blend until smooth. If your blender needs liquid to work, add one tablespoon of oat milk at a time until smooth.
Pour the ice cream into a bowl and fold in the cookie pieces. Serve and enjoy!
