A classic oatmeal cookie with a nice cup of coffee on Shabbos morning…just yum! I love the chewiness of the raisins, but if they scare you, feel free to swap them out for chocolate chips or nuts. Or throw them all in and make what’s called a monster cookie.
Yield: approximately 25 cookies
3/4 cup oil
3/4 cup Haddar Brown Sugar
1/4 cup white sugar
1 egg
2 teaspoons Gefen Vanilla Extract
1 teaspoon cinnamon
1 and 3/4 cups Glicks Flour
1 and 1/2 cups oatmeal (quick or old-fashioned)
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup raisins
Preheat oven to 350 degrees Fahrenheit. Prepare a cookie sheet.
In a bowl, using a whisk or wooden spoon, mix the oil, sugars, egg, vanilla, and cinnamon together.
Add the rest of the ingredients and mix until incorporated. Don’t overmix.
Shape into cookies and place on a cookie sheet.
Bake for 11 minutes (nine minutes if you like very soft cookies).
