A combination of all things “breakfast”, these oatmeal cookies are the perfect breakfast cookie! Oatmeal? Check! Cereal? Check! Raisins? Check! These cookies are filling, and make a large batch. A great recipe to pack up for a family outing, or to grab for a quick on-the-go snack. Substitute whole wheat or spelt flour for an even healthier option!
1/2 cup golden raisins
3/4 cup orange juice
3/4 cup oil
1 cup light brown sugar
1 cup sugar
2 eggs
2 cups flour
1/2 teaspoon Haddar Baking Powder
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons Gefen Vanilla Sugar
1 cup oatmeal
2 cups Gefen Cornflake Crumbs
1 cup ground coconut
Combine all ingredients, mixing well.
Drop by teaspoonfuls onto cookie sheet (cookies will spread during baking).
Bake for 10-12 minutes at 350°F.

These cookies are the perfect oatmeal cookies in my opinion! The combination of cornflakes crumbs, oats, flour and coconut gives it an awesome texture.. i used spelt flour and put choco chips instead of raisins…YUM!!
