Who wants to eat a bowl of oatmeal when you can eat cookies for breakfast!! These will become your absolute favorite grab-and-go breakfast! You can be creative and add in any seeds or dried fruit you prefer.
1 egg
1/2 cup Haddar Brown Sugar
3 tablespoons honey
1 teaspoon vanilla extract
1/4 cup Gefen Peanut Butter
1/3 cup oil
1/2 cup instant oats
1 and 1/2 cup Shibolim Spelt Flour
1 teaspoon baking powder
1 tablespoon pumpkin seeds
2 tablespoons sunflower seeds
2 tablespoons cranberries
2 tablespoons dried apricot
3 tablespoons chocolate chips
In the bowl of a mixer, combine the first five ingredients. Mix until well combined.
Add the oats, flour, and baking powder. Mix until combined. Stir in the seeds, fruits, and chocolate chips.
Place the dough in plastic wrap and refrigerate for 30 minutes.
Preheat oven to 350 degrees Fahrenheit.
Scoop cookies onto a lined baking sheet and bake for 12-14 minutes.
