Named after a famous candy bar, these Oh Henry bars boast a soft and chewy granola base with a creamy peanut buttery chocolate topping. You can swap out the corn syrup for honey or silan for a slightly healthier variation.
Yields 40 bars
4 cups quick/rolled oats (do not use instant!)
1 cup packed brown sugar
1 cup butter or margarine, melted
1/2 cup light corn syrup
1/4 teaspoon salt
2 teaspoons vanilla extract
1-1 and 1/2 cups chocolate chips
1/2 cup peanut butter
Preheat oven to 350 degrees Fahrenheit and line a 9 x 13 with parchment paper.
Combine brown sugar, melted butter, corn syrup, salt, and vanilla and mix until smooth. Stir in oats until well combined.
Spread the oats mixture in the 9 x 13 pan and pat down until even. Bake for approximately 15 minutes. There won’t be much of a change in color, so be sure not to overtake.
In a medium saucepan, combine the chocolate and peanut butter (you can add one teaspoon vanilla extract if you’d like) and stir until completely melted and smooth.
With a spatula, spread evenly over the granola bars.
Cut bars into 40 pieces and store in an airtight container
