Diets Crumb cake—or coffee cake, as it’s referred to in the outside world—has been the most popular cake since forever. It’s a classic. No matter which new cake recipes I try, I keep going back to this one.
Yield: 1 9×13-inch pan
4 cups Glicks Flour
1 and 1/2 cups sugar
1 cup oil, such as Gefen Canola Oil
2 teaspoons cinnamon
4 teaspoons baking powder
2 eggs
2 cups milk (I used Gefen Almond Milk to keep it pareve)
Preheat oven to 350 degrees Fahrenheit. Line a 9×13-inch pan with parchment paper.
In a large bowl, mix flour, sugar, oil, and cinnamon until crumbs form.
Set aside one and a half cups of the crumb mixture.
Add the rest of the ingredients and mix with a whisk until smooth.
Pour into a lined pan. Top with the remaining crumb mixture.
Bake for 45–55 minutes.
