How can you go wrong with a meat and potato dish? This easy dish looks super impressive the way the meatballs and potatoes are lined up. Sprinkle with some garnish and you have a super easy Passover-friendly meal. For more great ideas, watch Pesach in a Pot!

Ingredients

One Pan Meatballs and Potatoes

  • 1 and 1/2 poundsĀ ground beef

  • 6 medium yellow potatoes, peeled

  • 1 large yellow onion, diced very small

  • 1/2 cup cleaned and chopped cilantro

  • 3 cloves garlic, diced small

  • 1 (200-gram) tube Tuscanini Tomato Paste, divided

  • 2 tablespoons salt, divided

  • 2 tablespoons pepper, divided

  • 2 tablespoons turmeric, divided

  • 2 tablespoons Gefen Paprika, divided

  • 2 tablespoons olive oil, divided

  • 1 cup boiling water

Directions

Prepare the One Pan Meatballs and Potatoes

1.

In a large bowl, mix the ground beef with onion, cilantro, garlic, one tablespoon of salt, one tablespoon of pepper, one tablespoon of paprika, one tablespoon of turmeric, two tablespoons of tomato paste and one tablespoon of olive oil. Cover and refrigerate.

2.

Boil the potatoes in a large pot for 10 minutes. When they cool down, slice them thin.

3.

Preheat the oven to 350 degrees. Take the ground beef mixture out of the fridge. In a small bowl, mix the remaining spices with the tomato paste and one cup of boiling water. Set aside.

4.

In a rectangular pan, alternate slices of potatoes and balls of the ground beef mixture. Pour the sauce over and cover tightly.

5.

Bake for 40 to 45 minutes.

a bit too much tomato paste . i would recommend using 3/4 of the tube.

Overall good! But a bit too dense.

The spice amounts are way too much. Sadly had to throw it out.
