This supper happened on a whim one night when I got home late from work and had no time to think. Thirty minutes later, supper was done, and it was a huge hit. Isn’t it true what they say? Necessity is the mother of invention.
2 tablespoons oil
1 onion, diced
1 tomato, chopped
1 bell pepper, diced
1 and 1/2 pounds (680 grams) chicken cutlets, cubed
2 tablespoons Tuscanini Tomato Paste
1 tablespoon silan, such as Beleaves Date Syrup
8 ounces (225 grams) Gefen Israeli Couscous
2 cups water
2 teaspoons salt, or to taste
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon smoked paprika
1/2 teaspoon sumac
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
pinch cinnamon
handful fresh parsley or cilantro, chopped, for garnish
Heat oil in a wide pan over medium heat. Add the onion, tomato, and bell pepper. Sauté for five to seven minutes, until soft and fragrant.
Add the chicken and cook for three to four minutes, stirring until lightly browned on all sides.
Stir in the tomato paste and silan. Cook for one to two minutes to deepen the flavor.
Add the couscous, water, and spices. Stir well.
Bring to a boil and cover. Lower heat and simmer for 20 minutes, until the couscous is tender and the liquid is absorbed.
Fluff with a fork. Garnish with fresh herbs before serving.
