Diets I came across this recipe a while back and instantly fell in love with it — and you will too! The combination of a chewy crust, crumbly brown sugar filling, and oozing chocolate is right on point. Need I say more?
1 and 3/4 cups Glicks Flour
1/2 teaspoon Gefen Table Salt
1/3 cup sugar
3/4 cup + 2 tablespoons cold unsalted butter, cubed
1/2 cup unsalted butter
1/2 cup sugar
3/4 cup Haddar Dark Brown Sugar
1/4 teaspoon Gefen Table Salt
1 and 1/3 cups oats
1 and 1/2 cups good-quality chocolate, such as Geneve
3 eggs
1/2 cup shredded coconut (optional)
1 and 1/2 teaspoons vanilla extract
powdered sugar, for garnish
Preheat oven to 350 degrees Fahrenheit.
To make the crust, combine flour, salt, sugar, and butter in a food processor until it forms a dough. Spread evenly in a baking dish and bake for 18 minutes, until just golden.
While crust is baking, prepare the filling. Melt butter, then add sugars and salt and mix to combine. Let stand for 10 minutes, then add oats, chocolate, eggs, coconut, and vanilla. Spread evenly over the half-baked crust, then bake for an additional 15 to 20 minutes until firm. Let cool completely before cutting. Cut into squares, then dust with powdered sugar.

Our family loved these bars! I made them pareve by substituting oil for the butter. I used a 1/2 c plus a little more canola oil in the base, I used white flour. If using spelt flour, stick to 1/2c. In the filling I used 1/3c canola oil. Broke up one 100g bar of parve chocolate into smaller pieces. Delicious!
Can I do it in pareve version? will it also taste good?
