1. In a medium bowl, mix together oats, yogurt, milk, vanilla extract, maple syrup, and chia seeds or flax meal, if using.
2. Add the flavor add-ins of your choice and stir.
3. Divide between two jars or containers, cover, and refrigerate at least four hours.
4. If making carrot-cake oats, sprinkle extra cinnamon on top right before serving.
