Submitted by Clarice Itshakov I love a good Pad Thai and find that it is so difficult to find kosher Thai food so I created this recipe. It is super simple and takes almost no time or prep. It has the right amount of peanut butter and that kick you look for in a good pad thai, and it is healthy.
2 cloves garlic, minced
2 tsp ginger, minced
1/4 c peanut butter
1 tsp honey
2 tbsp soy sauce
zest of 1 lime and juice of 2 limes
1/2 tsp red pepper flakes (add more for spicy)
2 chicken breasts, sliced thinly
2 zucchini, spiralized
1 carrot, spiralized
1 red pepper, julienned
1/3 cup of fresh cilantro
brown rice noodles or shiitake noodles
chopped peanuts
lime wedges
Mix garlic, ginger, peanut butter, honey, lime, red pepper flakes in a bowl.
Pour half of this mixture over chicken and marinate for 15 minutes.
Add canola oil to the pan and cook zucchini, carrots and pepper for 5 minutes.
Take out of pan (I put in strainer to get some of the liquid out).
Cook chicken breasts in the same pan and then add vegetables back in. Add noodles.
Pour the rest of the dressing on and cook for 3-5 minutes.
Top with cilantro and extra toppings.
