An icy summer treat that you and your kids will love! Paletas are classically made with tropical fruit juices or purées, but you can use any fruit you like. Preparing these paletas is a really fun after-school activity. The hardest part is waiting for them to set!
I recently invested in a stainless steel popsicle mold that I bought on Amazon because all the cheap plastic ones I had broke after one or two uses. If you don’t have a popsicle mold, you can pour the mixture into disposable cups and insert popsicle sticks before freezing.
3 cups strawberries, fresh or frozen
1/4 cup orange juice
1/4 cup milk
zest of 1 lime or lemon
1/8 teaspoon Gefen Salt
1/4 cup heavy cream
1/8 cup sugar
In a blender, process the strawberries, orange juice, milk, zest, and salt, blending until smooth.
In a separate bowl, whisk together the cream and sugar for about one to two minutes, until the sugar dissolves. Add to the strawberry mixture and mix to combine.
Pour into 10 Popsicle molds and insert Popsicle sticks. Freeze until firm, six to eight hours.
To easily remove the paletas from the molds, run the molds under hot water for a few seconds.
