Although this fish takes minutes to prepare, its elegant presentation and gourmet flavors are worthy of your Yom Tov table.
6 salmon or sea bass fillets (1 and 1/2 to 2 pounds)
1/4 cup oil, such as Gefen Canola Oil
2 tablespoons Haddar Dijon Mustard
1/2 teaspoon kosher salt
dash of black pepper
3/4 cup coarse panko crumbs, such as Gefen
1/2 cup grated Parmesan cheese
1/2 teaspoon parsley flakes
Preheat oven to 400 degrees Fahrenheit.
In one bowl, combine oil, mustard, salt, and pepper.
In a second bowl, combine panko crumbs, Parmesan cheese, and parsley flakes.
Dredge fish in oil mixture, then in crumbs. Arrange in a 9×13-inch baking dish.
Bake until fish flakes easily with a fork, about 20 minutes.
Serve warm or at room temperature.
