Diets 3/4 cup of defrosted Beleaves Seedless Passion Fruit cubes
2 whole eggs plus 2 egg yolks
1/2 stick Earth Balance, cubed
1/2 cup sugar
graham cracker crumbs
strawberries, washed
coco whip
fresh mint leaves, washed
Add all the curd ingredients to a saucepan. Cook on medium heat and constantly stir, until the mixture thickens enough to coat the back of a spoon. Strain through a sieve and store in the refrigerator until cold.
When ready to serve, place dollops on each plate with crumbs, strawberries, glaze, and whip. Top with chopped mint.
