This is a really amazing recipe for when you want to fry chicken but prefer it to be battered rather than fried. Each chicken nugget comes out perfectly crispy with a moist center. Serve this with your favorite dipping sauce and enjoy!
1/4 cup vegetable oil for batter
4 eggs
3/4 cup Manischewitz Potato Starch
1/4 teaspoon salt
dash of pepper
1/4 teaspoon basil or oregano
4-6 boneless chicken breasts, cut into small nugget chunks
1/4 cup vegetable oil, for sautéing
Heat 1/4 cup vegetable oil in large frying pan.
In a small bowl, combine the first six ingredients well.
Dip chicken pieces into batter and cover chicken well.
Using a fork, gently place chicken into hot oil and let fry on each side for about three minutes or until golden brown.
Remove and drain on paper towel. Serve hot.

can this be frozen or served the next day refrigerated ?
I wouldn’t eat this cold the next day, I’d either warm it back up so it gets crispy or freeze the chicken raw and fry fresh.
