Passover Plum Pie

Ingredients

Plum Pie

  • 10 red plums peeled and sliced 1/4-inch slices

  • 1 cup potato starch

  • 1 and 1/2 cups almond flour

  • 1 cup sugar

  • 1+ cup oil (see directions)

  • 2 eggs

Topping

  • 1 teaspoon cinnamon

  • 1 tablespoon sugar

  • 1 and 1/2 teaspoons lemon juice

  • confectioners’ sugar

Directions

1.

Preheat oven to 350 degrees Fahrenheit.

Oil two nine-inch round bekelle.

3.

Mix all ingredients by hand in bowl with only one cup oil. Mix till no clumps – batter should be thick but wet. Might need to add extra oil.

4.

Pour into the two prepared pans.

5.

Arrange plums. Sprinkle cinnamon, sugar, and lemon juice on top.

6.

Bake for about 45 minutes.

7.

Sprinkle with confectioners’ sugar.
